simple recipe for Beef Fried Rice:
Ingredients:
- 2 cups cooked rice (preferably chilled, day-old rice works best)
- 250g beef steak, thinly sliced
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup mixed vegetables (such as peas, carrots, corn)
- 2 eggs, lightly beaten
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Green onions, chopped (for garnish, optional)
Instructions:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced beef to the skillet and cook until browned and cooked through, about 3-4 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and chopped onion, and cook until the onion is translucent, about 2-3 minutes.
- Push the onion and garlic to one side of the skillet, then pour the beaten eggs into the other side. Let the eggs cook for a minute or two until they begin to set, then scramble them until cooked through.
- Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry the rice for 2-3 minutes until it starts to crisp up slightly.
- Add the cooked beef back to the skillet, along with the mixed vegetables. Stir-fry everything together for another 2-3 minutes until the vegetables are heated through.
- Pour the soy sauce and oyster sauce over the rice mixture, and toss to combine, ensuring that everything is evenly coated with the sauce.
- Season with salt and pepper to taste, and continue to stir-fry for another minute or two.
- Once everything is heated through and well combined, remove the skillet from the heat.
- Garnish with chopped green onions if desired, and serve hot.
